To choose as much as you want, at better price, in super quality, everything smells beautiful and you can put it in your own containers without plactic bags.

Plus, the sellers are nice to you because they want to,not because they have to (ok not everybody but most of them,  it depends on how they sleep, but most of them go to work because they enjoy it). Shopping is more personal. They want you to come back again because they really care about quality and access.

In addition, you are shopping on fresh air. You can even bargain without you wanting (I could not find the tiny one once and the automats said a lower price). You don't have to wait in the line when a lot of people just go to the opposite stand. 

Yes, the only disadvantage is that it is worse, in the winter.
